Les Chaumées is the first growth parcel that overlooks the northern sector of Chassagne-Montrachet vineyard (on the Puligny-Montrachet side). As far as the domain's vines are concerned, they are situated in the upper part of this climat at more or less 300 metres altitude. As it is often the case on top slope plots, the soil is not very deep there: it doesn't reach over 50 cm depth on average. It is composed of a light earth (with little clay presence), not too sticky when damp and draining naturally and quickly after heavy rains. The presence of stones is highly important. So we have here a stony terroir which is also noticeable for its rather steep slope, with an east exposure, tending to slightly incline northward. This situation could make you think this parcel is late to develop, which is not the case at all. The well-formed bunches ripen very easily without any fear of disease. This vine, planted in 1988, stretches over 22 ares.
During the harvest, the grapes are first sorted out on the vines, then, if necessary, there may be a second sorting in the winery on a special sorting table. After a gentle pressing, the must is left to settle naturally for about 12 hours. This light racking of the lees enables the wine to keep a good substrate, thus being protected from oxidation and, as a consequence, preserving all its aromatic richness. It is then poured into barrels by gravity and left to ferment. The Chassagne Premier Cru Les Chaumées is matured in oak casks for 20 months (using 60% new oak). During this period, the wine is left undisturbed except for a few stirrings of the lees. We have experienced that medium grain wood brought tension to the wine without enhancing the toasty aromas that could alter the fresh and straightforward character of this wine. Before bottling, the wine spends about three months in vats in order to homogenize its components. The winery benefits from a four- level structure enabling to handle the harvest by gravity from the arrival of the grapes to the bottling operation, without any pumping.
The sun was 2015's guest star and kept on shining. The vines stored a lot of energy during the whole growth cycle. July was exceptionally warm and dry with temperatures reaching over 30° for 18 days; it was followed by life-giving rains in August. After an early awakening of the nature cycle, flowers could be seen on the vines as early as the end of May. The maturing of the grapes was very fast and we started harvesting on September 2nd. Picking lasted for 6 days with nice weather conditions... The grapes were splendid in the vats as well as in the presses. Les Chaumées 2015 was harvested on September 4th. Bottling was carried out on April 18th 2017, without any filtration.
This is a cuvée that displays a sort of quiet power. Right from the beginning, on the first nose, you can feel the beautiful maturity of this vintage. It exhales juicy yellow peach fragrances with a hint of acacia honey and almond. It is harmonious and fleshy on the palate, with a good balance between fatness and freshness. This is definitely a great wine that is perfectly well-balanced.
